2kgchicken breasts
or thighs, cut into bite-size chunks, increased from 1.5 pounds

3 cupsfresh pineapple chunks
Bang Bang Sauce:

½ cupGreek yogurt
replacing mayo for added protein

⅓ cupsweet thai chili sauce

2 tablespoonstamari soy sauce

1clove garlic
small, grated

2 teaspoonslime zest

1 tablespoonpickled ginger

For Serving:
Instructions
Step 1
In a blender, blend the olive oil, tomato paste, tamari/soy sauce, honey, ginger, chipotle, paprika, thyme, salt, and pepper until the chilies are chopped.
Step 2
Mix the chicken and chipotle sauce in a bowl. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).
Step 3
Take the skewers and thread the chicken with the pineapple chunks, packing them densely.
Step 4
Set your grill, grill pan, or skillet to medium-high heat. Grill the skewers until lightly charred and cooked through, turning them occasionally throughout cooking, about 10 to 12 minutes total. The internal temperature should reach 74°C.
Step 5
To make the sauce: combine Greek yogurt, sweet Thai chili sauce, tamari/soy sauce, grated garlic, lime zest, and chopped pickled ginger in a bowl. Mix well.
Step 6
Serve the chicken and pineapple skewers with the bang bang sauce for dipping. Sprinkle with toasted pumpkin seeds, green onions, and fresh basil. Serve with edamame beans on the side.
Step 7
For extra flavor, you can offer additional chili sauce mixed with a couple tablespoons of ketchup as a secondary dipping option.
