Instructions

Peri Peri Marinade

Step 1
For the marinade, blend all the ingredients together and add half of the mix to your chicken (I cut mine in cubes but you can use strips or slices based on what you are using the peri peri chicken for), set the remaining half aside

Cover and let it marinate in the fridge for at-least half hour. The longer you marinate for, the better the taste.

I used skewers so its easy to move the chicken pieces around but you can do without them too. Pre-heat the oven and cook at 200 °C for 20mins or pre-heat the grill for 5mins and grill once closed for 10mins or until chicken is cooked through

Cooked Peri Peri Sauce

Step 4
Place the remaining peri peri marinade in a pan, bring to boil once and let it simmer for 20mins

I added a few other sauces to this, listed above. You can avoid the step altogether or add in any sauces you like in your buns/burgers

Assembly

Add some lemon juice to sliced red onions and set aside

Cut the baguettes

Apply the cooked peri peri marinade and mayo on both buns

Add the grilled peri peri chicken and all the chopped vegetables

Top with cheese

Melt some butter with mixed herbs and apply it to the outside of the baguettes

Place in the oven at 200 °C for 10-15mins until the cheese melts and the baguettes are golden
