Mix softened butter, salt, msg and mustard in a bowl, add the flour and grated cheese and mix them well with a spatula. When well mixed, go in with your hands… you want to join all the ingredients and make a dough. It will seem at first as it needs more liquid, but it doesn’t… it will come together. IMPORTANT: do not knead the mix as you don’t want to develop the gluten too much.

Wrap the cylinder in cling film and refrigerate for at least 2 hours. This will allow the dough to hydrate and firm up.

After the cooling time has passed, preheat the fan oven to 200C and line a baking sheet with parchment paper

Unwrap and thinly slice the cylinder with a sharp knife in 1-2mm discs., and place them on the lined baking sheet, leaving about 1cm in between them.
