Instructions
Step 1
Cut chicken into 1 inch cubes and marinate in dressing for at least 1 hr
Step 2
Slide chicken cubes onto skewers
Step 3
Slice zucchini lengthwise and sprinkle with salt and pepper.
Step 4
Preheat grill or grill pan
Step 5
Place zucchini and skewers on grill. Turn skewers every few minutes until done. Zucchini should be flipped once halfway through (6 minutes in depending on heat of grill).
Step 6
In last minute of cooking baste both skewers and zucchini lightly with dressing.
Step 7
Remove zucchini and meat from grill, squeeze lemon juice over chicken and let rest for 3 minutes
