Instructions
Step 1
Preheat oven to 350F.
Step 2
Using an electric mixer, mix the butter until creamy. Blend in the sugar until fully mixed. Add in vanilla extract, peppermint extract, and egg. Blend.
Step 3
In another bowl, sift flour, cocoa powder, baking powder, baking soda, and salt. Gradually mix it into the wet mixture. Lastly, fold in the chocolate chips. (Optionally, you can fold in some crushed peppermint here.)
Step 4
Drop a heaping tablespoon of cookie dough onto a parchment lined baking sheet. Flatten the tops of each ball of dough slightly.
Step 5
Bake tray of cookies for 10 minutes at 350F.
Step 6
Top the cookies with crushed peppermint and put it back in the oven for one more minute.
Step 7
Enjoy! Best served with a glass of milk.
