Caprese Omelet Roll

Omelet rolls look impressive but are remarkably easy to make. I love the fresh flavors of caprise salad and those same festive colors.That makes it a perfect dish for a special brunch.

Instructions

Step 1
Preheat the oven to 350° and line a 12 x 17 inch rimmed baking sheet with parchment paper, leaving an overhang for easy removal. Grease the parchment.

Step 2
In a blender, combine the eggs, cream cheese, garlic, salt, and pepper. Blend until smooth. Bake for 12 to 15 min until the omelet is just cooked through
Step 3
Sprinkle the omelet with mozzarella and about 2/3rds of the chopped tomatoes. Working from one of the shorter ends, and using parchment paper to help you lift the omlet, roll the omelet up tightly. Return it to the oven for another ten minutes to melt the cheese.

Step 4
Remove from the oven and sprinkle with chopped basil and remaining tomatoes. Slice and serve.
