Take your sweet potato game to the next level with this Air Fried Loaded Sweet Potato, a perfect balance of sweet, salty, creamy, and crunchy. Roasted until tender in the air fryer, the sweet potato is split open and topped with cool, tangy Greek yogurt, a drizzle of golden honey, crispy smoky bacon, and crushed pecans. It’s comforting yet fresh, indulgent but wholesome and healthy too!

Instructions

Step 1
Wash and scrub the sweet potato well. Pat dry.
Step 2
You can prick it a few times with a fork (this step is optional but helps release steam).
Step 3
Then Lightly rub with oil and a pinch of salt for a crispier skin. Air fry at 190°C for 35–45 minutes, depending on size, you may need to reduce or increase the time.
Step 4
Flip halfway through. Your potato should be fork-tender all the way through and caramelized in spots.
Step 5
Once the potatoes are done remove and set aside and place into your air fryer your streaky bacon, cook on 200c for 5 minutes flipping halfway.
Step 6
Once your bacon is cooked, slice open your potato and drizzle over the yogurt, honey and once your bacon, top with your pecans and enjoy.
