Instructions

Step 1
Melt butter in a saucepan over medium heat.
Step 2
Whisk in flour and cook for about 1 minute to get rid of the raw flour taste—this forms a roux.
Step 3
Slowly add milk, a bit at a time, whisking continuously to avoid lumps.
Step 4
Once all the milk is in, simmer gently until the sauce thickens (around 3–5 minutes).
Step 5
Remove from heat and stir in grated cheese until melted and smooth.
Step 6
Season with salt, pepper, and optional extras.
