1. Prepare the mixture: In a bowl, mix ricotta (or soft cottage cheese), eggs, sugar, salt, and vanilla extract (if using). Add the semolina (or oatmeal flakes) and mix well. Let it sit for 10–15 minutes to allow the semolina to absorb some moisture and thicken. 2. Prepare the baking dish: Grease the baking dish with butter. Pour the mixture into the dish and level it with a spoon. 3. Bake: Preheat the oven to 370°F. Bake for 30–40 minutes or until the top is golden brown (mix a tablespoon of milk with honey 1:1 and pour over the casserole, turn on the oven to 400 F° and leave for 5-7 minutes) . 4. Cool and serve: Let the casserole cool for 10–15 minutes before cutting. It will be easier to cut and hold its shape.
