Chocolate and Custard Bread and Butter Pudding

Created this recipe with my Nan and by God is it to die for! Caramelised and crisp on top and soft and smooth underneath. Earthy notes of nutmeg balance so well with the sweetness from the chocolate and the peanut butter chips. Serve with chocolate ice-cream and you're in a world of heaven!

Instructions

Step 1
Butter your bread of choice on both sides and layer into a deep baking dish. I used white hotdog rolls purely because they needed using up, but you can use any bread, get creative!

Sprinkle a tablespoon of light brown sugar over the top of each layer of bread. Along with a sprinkle of peanut butter chocolate chips and a few dollops of chocolate spread. I used chocolate and vanilla swirled spread.

Add into a jug or mixing bowl the two eggs, custard, milk, nutmeg and vanilla extract and whisk until combined.

Step 4
Once you have done several layers of bread and butter (I did three layers), you can then pour over your custard mixture. Sprinkle another spoonful of brown sugar on top so that you will get a lovely crisp and caramelised finish when it comes out of the oven. Before putting your dish in the oven leave the bread to soak up some of that custard mixture. I left mine for half hour to an hour. Pre heat your oven to 180 degrees fan assisted whilst the mixture is soaking.

Pop your dish into the oven and cook for 30-45 minutes or until the pudding is set in the middle and crispy on top. The pudding is set when it has a wobble to it and a knife comes out clean from the middle.

Leave the pudding to cool for 20mins. Serve with chocolate ice-cream and sit back and enjoy!
