EGG AND BROCCOLI SLAW WRAP

We've given egg salad a bit of a makeover by combining the egg salad with roasted red peppers and a yummy citrusy slaw and serving it in a rolled tortilla.

Total Time: 15 minutes (plus marinating over night)
Ingredients
2 teaspoons light sour cream
1 teaspoon snipped fresh chives
1 ½ teaspoon finely shredded lemon peel
1 teaspoon lemon juice
½ teaspoon honey
1/3 cup packaged shredded broccoli (broccoli slaw mix)
2 hard-cooked eggs, sliced
1 low-carb whole-wheat tortilla
2 tablespoons chopped, drained bottled roasted red sweet pepper
Coarsely ground pepper (optional)
Preparation
1. In a small bowl, combine sour cream, chives, lemon peel, lemon juice and honey. Add broccoli slaw; toss gently to coat. Cover and chill overnight. Wrap and chill egg slices overnight.
2. Spread broccoli mixture along the bottom edge of the tortilla, leaving a 1 1/2-inch space on both ends of the mixture. Top with roasted pepper and egg slices. Sprinkle with ground pepper, if desired. Fold sides of tortilla over filling. Starting from the bottom edge, roll up tortilla.

2 cups broccoli, florets, chopped
▢1 cup broccoli, stem, matchsticks
▢1 red apple, matchsticks
▢¼ red cabbage, shredded
▢1 carrot, shredded
▢⅓ cup flat leaf parsley, finely chopped
Salad Dressing
▢¾ cup mayonnaise
▢1 tbsp apple cider vinegar
▢1 tsp Dijon mustard
▢1 tsp horseradish cream
▢1 tsp maple syrup
▢salt, to taste
▢pepper, to taste
Directions
Salad Dressing
In a large bowl, mix all dressing ingredients together.
Mix well until combined and creamy. add all salad ingredients and toss together.
Make sure the salad is well coated and mixed well.
Season with salt and pepper to taste. Refrigerate overnight for best results.
