Instructions

Step 1
The thing I do that no one else does is to remove the fat pad before cooking. Any drippings from fat flame up large and you have an uncontrolled grease fire heating to 700F and charring the meat.
Step 2
The grilling is to get the grill hot first to 300-400F and placed meat with rub directly over flames and flip every 5 minutes. Then move off the direct flame and cook at a grill temperature of 300 for 20 minutes for rare and 30 minutes for well done. Let meat sit for 5 minutes afterwards before slicing and dicing.
Step 3
Cut at an angle so that the meat slabs are longer and make them 1/8 to 1/4 inch thick so the seasoning can be tasted.
