Instructions

Step 1
Bring a medium pot of salted water to a boil. While the water heats, zest the lime and cut it into wedges. Peel and finely mince the garlic. Roughly chop the Asian greens, separating the stems and leaves.
Step 2
Once the water is boiling, add the rice noodles and Asian green stems. Cook for 3 to 5 minutes, until the noodles are tender. Reserve ¼ cup of the cooking water (double for 4 portions), then drain and rinse the noodles and stems under cold water. Toss them with a drizzle of oil to prevent sticking. Set aside.
Step 3
In a large pan, heat a drizzle of oil over medium-high heat. Add the minced garlic and sauté for 30 seconds to 1 minute, until fragrant. Add the ground beef and cook, breaking it up with a spoon, for 4 to 6 minutes until browned and cooked through. Season with salt.
Step 4
To the pan with the beef, add the cooked noodles, Asian greens (both stems and leaves), sweet soy sauce, soy sauce, and lime juice (from half the lime). Cook, stirring frequently, for 1 to 2 minutes until everything is well combined and heated through.
