Instructions

Step 1
Cut pork belly slices into 1 inch pieces. To pan, add oil, garlic and onions. Cook until fragrant. Add pork belly and cook for about 5-6 minutes or until fully cooked through. Cook vermicelli noodles according to package. Assemble bowl with noodles, pork belly, veggies, scallion oil, crush peanuts (optional) and add Vietnamese fish sauce.

Step 2
Mix sugar with boiling water, then mix to dissolve and let it cool. Roughly chop the chilis and put it in a food processor. Add garlic and 2 tbsp of the simple syrup (sugar/water). Blend for 1-2 minutes. Add lime juice and fish sauce then mix together. Taste and adjust to your liking.
