Asian-Caramel Glazed Pork Chops

Instructions

Step 1
Bring sugar and 2 tbsp of water to boil in medium saucepan over medium high heat, stirring constantly. Once sugar is dissolved, let sit until it turns golden (about 5 minutes).
Step 2
Immediately remove from heat and add fish sauce and another 2 tbsp of water. Mix vigorously, may seize up but will smooth out in next step.
Step 3
Add garlic and pepper, return to medium heat and stir until smooth, about 2 minutes. Preheat grill for chops. Pat chops dry, brush with oil and season with salt and pepper.
Step 4
Grill chops, turning every 3-4 minutes. When almost cooked through (6-8 minutes), begin brushing with caramel sauce. Brush and turn often until deeply browned about 1-2 minutes. Remove from heat and allow to rest for 5 minutes. Serve with lime.
