Instructions
Step 1
Preheat oven to 350° and line two baking sheets with parchment paper, then very lightly grease with cooking spray

In a large bowl, combine all powdered ingredients and salt
Step 3
In a separate bowl, combine egg whites and vanilla, whisking until frothy, then add chocolate chips
Step 4
For shinier, more fudgy cookies, rest dough at room temp for 15-20 minutes
Step 5
Scoop tablespoon size mounds onto the prepared baking sheets and bake until set, checking at 10 minutes and then in 2 minute intervals
Step 6
Let cook for 5 mins on the baking sheets, then carefully transfer to a cooling rack
