elderflower cream

4egg yolks

4 dlheavy cream

2 Tbspgranulated sugar

1 dlconcentrated elderflower cordial

1 Tbsppotato starch

1 tspvanilla sugar
for serving
Instructions
Step 1
Rinse, hull, and slice the strawberries. Carefully mix the berries with lime juice and honey and let marinate for 30 minutes.
Step 2
2. Elderflower cream: Mix egg yolks, half of the cream, sugar, elderflower cordial, and potato starch in a saucepan and heat while stirring until the cream thickens. Let the cream cool.
Step 3
3. Whip the remaining cream with vanilla sugar and mix with the cooled cream.
Step 4
4. For serving: Layer cream and marinated berries in individual glasses. Top with fresh berries and crumbled oat cookies or “drömmar.”
