Salata Copycat Wrap

This is my attempt to replicate the delicious salad wraps i used to get at this wonderful restaurant called Salata. This tastes exactly like the wraps I had but better?! and it made me so happy. It has all kinds of greens, fruits, nuts and tofu goodness.

Ingredients
2 servings

0.67 packagesweet kale salad mix

1 handfulspring salad mix

3strawberries
large, chopped

¼ cupchickpeas
cooked, I used canned

1 ½ cupstofu
cubed, firm or extra firm

¼ cupwalnuts
crushed

½ cupfeta cheese
⅓ cupraspberry vinegarette dressing

2spinach tortilla wraps

1 tspdill
to sprinkle on tortillas
To serve on the side

1 bagpita chips
lemon garlic vinegarette dressing
Instructions
Step 1

Drain, press and dry tofu. Convection bake on a wire rack at 400 for 20-25 mins until golden brown. Note: it just needs to be dry, not necessarily crispy.
Step 2

In the meantime, prep all ingredients. Set wraps, dill, lemon vin dressing, and pita chips aside- they will be used at the end. Mix other ingredients into a LARGE bowl.
Step 3

Make sure to add in that package of dried pepitas and cranberries that came with the Taylor Farms salad kit
Step 4

Heat spinach tortillas, sprinkle some dill on the tortillas. then divide contents of the bowl into 2 large overstuffed wraps! Note: i used a microwaveable tortilla warmer for 30 seconds. When warm, tortillas get nice and stretchy and can hold much more than you think!!
Step 5

Cut wraps in half and serve with the pita chips and a lil cup of lemon garlic vinegarette on the side.
