Line an 8-inch (20cm) round or square cake pan with parchment paper. 2οΈβ£ Mix Wet Ingredients: In a large bowl, whisk together eggs, maple syrup, Greek yogurt, and vanilla. Fold in the grated zucchini and apple. 3οΈβ£ Add Dry Ingredients: Stir in oat flour, cinnamon, baking soda, nutmeg, and salt until just combined. Fold in optional add-ins if using. 4οΈβ£ Bake: Pour batter into the prepared pan and bake for 30β35 minutes, or until a toothpick inserted in the center comes out clean. 5οΈβ£ Cool & Serve: Let cool in the pan for 10 minutes, then transfer to a rack to cool completely.
