Sheriff Don's 6-Gun Texas Chili & Beans

There are thousands of delicious chili recipes to choose from, so I've taken the liberty to distill the ultimate 'boot stompin fixins' from six of my favorite recipes (hence the 6-gun reference). It's important to point out that any self-respecting Texan will empty his pistol in a chef if they spot beans and/or tomatoes in their bowl of chili. On the other hand, I have taken the liberty of borrowing ingredients from two 'authentic' Texas chili recipes, so that obliges me to at least credit the state name in my recipe title... thus (gulp), may this renegade soul R.I.P..

Instructions

Step 1
In a large blender, add broth, chopped hotdogs, chipotle peppers, adobo sauce, mesa harina flour, chocolate squares, plus all spices, and blend together until smooth. Set aside
Step 2
In 8 qrt Dutch Oven, add bacon grease to carmelize onions, bell pepper, and celery
Step 3
Next, stir in diced beef and ground beef, then cook until brown (8-10 mins)
Step 4
Stir in blended ingredients along with diced tomatoes, tomato sauce, beer, garlic, sugar, butter, and beans
Step 5
Cover and slow cook for 3-hrs, then remove cover and simmer an additional 1-2 hrs, or until chili has thickened
Step 6
Serve hot with chopped onions, sour cream, and shredded cheese garnishes. When combined with hot buttered cornbread or pan-fried tortillas, you'll have a harty and satisfying meal
