Instructions
Step 1
Trim green tops from leeks and thinly slice white portion
(about 2/3 cup)
Step 2
In medium saucepan cook leeks and onion in butter until vegetables and tender but not brown

Stir in sliced potatoes, chicken stock and 1 tsp salt
Step 4
Bring to boil, reduce heat, cover and simmer for 35-45 minutes (or until potatoes are very tender
Step 5
Use blender or immersion blender - blend until mixture is smooth
Step 6
Stir in milk and season to taste with salt and white pepper
Step 7
Bring to a boil stirring frequently
Step 8
Cool
Step 9
Stir in whipping cream cover and chill thoroughly before serving

Garnish with snipped chives
