there’s something sooo nourishing to me about making a salad that you can eat with a spoon. this salad keeps getting better as it sits throughout the week and has all of the best fall flavors. throw it in a mason jar and prep it for the week or make it for lunch/dinner with a big piece of toast! options are endless.
