Base

1 scoopvanilla whey protein
or 1 packet high protein pudding powder vanilla dr oetker

Base
Step 1
Preheat the oven to 180°C (350°F) and line a small baking tin (approx. 15–18 cm / 6–7 inches) with parchment paper or lightly grease it.
Step 2
In a mixing bowl, combine the egg, Skyr, cottage cheese, and vanilla whey protein. Blend with a hand mixer or food processor until smooth and creamy.
Step 3
Pour the mixture into the prepared tin and spread evenly.
Step 4
Bake the base for 30–35 minutes or until set and slightly golden on top. Let it cool completely.
Topping
Step 5
In a small pot, whisk together the chocolate pudding powder, cacao, and milk. Cook over medium heat, stirring constantly, until the mixture thickens (as per packet instructions). Remove from heat and let it cool slightly.
Step 6
Once the base is cool, spread the chocolate topping evenly over it. Chill in the fridge for at least 2 hours, or until fully set.
Step 7
Optional: Top with Greek yogurt, berries, or a sprinkle of cocoa nibs for extra flair.
