Instructions

Whip the cream

Step 1
In a mixing bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form. The cream should be light and spreadable.

Assemble the sandwiches

Place two slices of bread on a flat surface. Spread a thick layer of whipped cream on each slice. Arrange your fruit in a pattern that will look nice when cut. You can line them up or create a triangle shape. Spread a little more cream on top to fill any gaps.

Place the second slice of bread on top, cream side down. Press gently to hold it together.

Wrap and chill

Step 4
Wrap each sandwich tightly in plastic wrap. Place in the fridge for 30 to 60 minutes. This helps the cream firm up and makes slicing cleaner.

Slice and serve

Unwrap the sandwiches and slice them diagonally with a sharp knife. Wipe the blade between cuts for neat edges. Serve chilled and enjoy.
