Instructions
In a small saucepan over medium heat, warm the heavy cream to a gentle simmer for about 5 minutes, stirring regularly as it thickens.
If using, sauté the minced shallot and garlic in a little butter or oil until softened, before adding them to the cream.
Add about half of the blue cheese crumbles to the cream, using a fork or whisk to combine until mostly melted and the sauce thickens slightly.
Stir in the Worcestershire sauce and mix until combined.
Add the remaining blue cheese crumbles and cracked black pepper, then remove the pan from the heat and continue to stir until the cheese is incorporated.
Serve warm over your favorite steak, garnishing with fresh chives.
Tips
