Instructions
Step 1
Toast the slices of bread to desired crispiness.
Step 2
Bring a pot of water to a boil, then poach the eggs. Separately for the best results.
Step 3
Add mushrooms to a frying pan on medium-low heat. After a few minutes add in garlic and thyme, then mix through. Cook for further 5-7 minutes, allowing the mushrooms to soften. Once caramelised, remove from the heat and set aside.
Step 4
Scoop out avocado flesh into a small bowl. Add in the lemon juice and season with salt and black pepper. Mash using a fork. Once mashed, mix through.
Step 5
Spread the mushrooms over the bread slices, then spread avocado mix over this. Place the poached egg on top. Sprinkle with seasoning and then sprouts to serve.
