Instructions

Step 1
Step 1 Bring a large pot of salted water to a boil. Step 2 Add carrots and cook until just tender, about 2 minutes. Step 3 Meanwhile, whisk together oil, lemon juice, ginger, honey and salt and pepper. Step 4 When carrots are done, drain and transfer to bowl with dressing. Step 5 Gently fold cilantro and onions into carrots. Step 6 Garnish with peanuts and serve.
