Instructions
Step 1
Preheat oven to 180 degrees.
Step 2
Cook the pasta in a saucepan of boiling water until al dente.
Step 3
Meanwhile, melt butter in a frying pan over medium heat. Add shallot and cook for 2 minutes.
Step 4
Add in flour, mustard, and herbs. Cook and stirring for 2 minutes or until the mixture bubbles.
Step 5
Reduce the heat to low, then gradually add the milk while constantly stirring. Add in pesto and tomatoes, then stir through.
Step 6
Cook for 5 minutes or until the sauce boils and thickens. Remove from the heat. Add cheddar and stir to combine.
Step 7
Stir the pasta into the sauce and then spoon into an ovenproof dish. Evenly sprinkle over the breadcrumbs and parmesan.
Step 8
Bake for 15 minutes or until golden. Serve sprinkled with chilli flakes, if desired.
