Instructions
Step 1
Prep fruit. Wash, pit, and chop plums into quarters or smaller. No need to peel—skins add natural pectin and colour.
Step 2
Mix in the Pot - Add plums, sugar, and lemon juice to the Instant Pot. Stir to combine. Let sit for 10–15 minutes to draw out the juices (optional, but helps with flavor and consistency).
Step 3
Pressure Cook - Secure the lid and set to Manual / Pressure Cook on High for 1 minute. Then natural release. Allow a natural release for 15 minutes, then quick release any remaining pressure.
Step 4
Mash & Simmer - Open the lid and mash fruit to desired consistency using a potato masher or immersion blender.
Step 5
Turn on Sauté (Low or Medium) and simmer uncovered, stirring regularly, for 10–20 minutes until thickened. The jam will continue to thicken as it cools.
Step 6
Cool & Store - Spoon into clean jars. Let cool completely before sealing.
Step 7
Store in the fridge (up to 3 weeks) or freeze in portions (up to 6 months).
