Chocolate-Orange Zucchini Bread Recipe

This zucchini bread is the best of all worlds: fresh, cozy and subtly sweet. Serves: 8 Prep: 20 minutes Cook: 50 minutes Total: 1 hour 10 minutes Difficulty: Easy Serves: 8 Ingredients 1 cup flour 1⁄4 cup cocoa powder 3⁄4 cup light brown sugar 1⁄2 tsp. baking soda 1⁄4 tsp. salt 2 eggs 1⁄2 cup vegetable oil 1 zucchini, grated (yields 2 cups) 1 tbsp. orange zest 1⁄2 cup chocolate chips Directions Step 1 Preheat oven to 350°F. Grease 9x5-inch loaf pan. Step 2 In large bowl, combine flour, cocoa powder, brown sugar, baking soda and salt. In medium bowl, whisk eggs and vegetable oil. Step 3 Pour egg mixture, zucchini and orange zest into bowl of dry ingredients, mixing well. Stir in chocolate chips. Step 4 Transfer to loaf pan and bake 50 minutes, until cooked through and toothpick inserted in center comes out clean. Allow to cool, then cut into slices. Enjoy, storing any leftovers in an airtight container.
