Instructions

Step 1
Preheat oven to 200°C (fan forced). Line a baking tray with baking paper.
Step 2
In a large bowl, sift the flour and salt. Stir in sugar if using.
Step 3
Rub in the cold butter with your fingertips until the mix looks like fine breadcrumbs.
Step 4
Make a well in the centre, then add milk (and vanilla if using). Mix gently with a butter knife or spatula until it just comes together into a soft dough.
Step 5
Turn dough onto a lightly floured surface. Gently pat it into a 2.5–3cm thick disc — don’t knead or overwork it.
Step 6
Use a cutter or glass to cut out rounds. Place close together on the tray.
Step 7
Brush the tops with a little extra milk.
Step 8
Bake 15–20 minutes, until lightly golden and they sound hollow when tapped underneath.
