Muffins

1 cupquinoa flour

1 ½ cupsold-fashioned oats

1 ½ teaspoonsbaking powder

1 teaspoonbaking soda

1 teaspoonsalt

1 teaspooncinnamon

¼ cupvegetable oil

¼ cuplight brown sugar
packed

¼ cupCoconut Sugar

2eggs

1 Cupplain greek yogurt

1 cupchocolate chips
Crumble topping
Instructions
Step 1
Preheat your oven to 350 degrees F
Step 2
In a bowl, mix the quinoa flour, oats, baking powder, soda, salt and cinnamon
Step 3
In another bowl, mix the oil, coconut sugar, brown sugar, eggs, vanilla and greek yogurt
Step 4
Pour the wet ingredients into the dry ingredients. Mix until well combined.
Step 5
Fold in your chocolate chips
Step 6
Place muffin tins into a 12 count muffin tin, or grease. Pour the batter evenly among each cup (fill untill almost full)
Step 7
In another bowl, mix together the crumble topping ingredients.
Step 8
Spoon a large spoonful of the crumble topping onto each muffin.
Step 9
Bake the muffins for 15-20 minutes or until done in the center. Let the muffins cool for 10 minutes. ENJOY!
