3 tablespoonsolive oil

3garlic cloves
chopped

4.5 poundssweet Italian sausage
casings removed

3 x 28 ouncecans whole tomatoes

3 x 8 ozcans tomato sauce

3 x 6 ouncecans tomato paste

3whole onions
peeled

1.5green bell peppers

0.75 lbfresh mushroom
sliced

1 ½ cupsfresh parsley
chopped

1 tblssugar

1 ½ teaspoonsdried basil leaves

¾ teaspoonfennel seeds

0.75 poundcheddar cheese
grated

Instructions
Step 1
Heat oil in a large Dutch oven and sauté garlic and oil until lightly browned
Step 2
Add sausage, removing casing and crumble and brown
Step 3
Drain fat remove sausage and set aside
Step 4
Add undrained, whole tomatoes, tomato sauce, and tomato paste to the Dutch oven. Cook over medium heat for 15 minutes, stirring occasionally.
Step 5
Return sausage to pan. Add remaining ingredients except the cheese and salt and simmer for 15 minutes.
Step 6
Add cheese a little at a time stir until cheese is blended
Step 7
Simmer covered for one and a half hours

Step 8
Remove and discard onions and peppers add salt to taste and serve over cooked pasta
