Topping:
Instructions
Step 1
Preheat oven to 210C.
Step 2
Grease a shallow 27 cm x 18 cm tin with melted butter. Line base with baking paper, extending it over two sides.
Step 3
Add sifted flour, butter and sugar to a food processor. Using pulse button, process for 10 seconds or until mixture is fine and crumbly.
Step 4
Add water and process briefly until mixture comes together.
Step 5
Pour mixture into tin, pressing evenly over base using lightly floured hands.
Step 6
Bake for 5 minutes, then remove and allow to cool.

Reduce oven temperature to 180C.

Topping: Beat butter and sugar in a small bowl with electric beaters until light and creamy. Gradually add the eggs, beating well after each addition.add vanilla

Transfer to a large mixing bowl, then add almond meal and flour.
Step 10
Stir with a wooden spoon until just combined.
Step 11
Spread jam over pastry base.
Step 12
Spread evenly with topping and sprinkle with flaked almonds.

Bake for 20-25 minutes or until lightly golden.

Cool in tin, then cut into fingers when cold.
