Instructions

Seasoned Rice

Step 1
Wash the sushi rice until water runs fairly clear, drain well. Place washed rice into a saucepan with 2 cups of cold water and a pinch of salt.
Step 2
Place the saucepan on a burner and set the heat to medium high, when the water begins to boil turn the heat to low and place a lid over the saucepan. Continue to cook the rice covered for 15 minutes, until the water is all absorbed.
Step 3
Remove the saucepan from heat but do not remove the lid. Let the rice rest for 15 minutes.
Step 4
While waiting, in a separate bowl mix the rice vinegar, sugar, and salt. When the rice finishes resting, dump into a wide bowl and fluff with a rice paddle. Incorporate the seasoned rice vinegar by gently folding into the rice without crushing the grains. Do not over mix.

Glazed Spam

Step 5
In a small bowl mix soy sauce and sugar until the sugar is dissolved. Set aside.
Step 6
While the rice is cooking, fry up the spam until caramelized on both sides at medium high heat. Turn the heat to low and let the frying pan cool off for a minute or two.
Step 7
Pour the sugar and soy sauce mixture over the spam. Using tongs, flip the spam slices and drag them through the glaze, trying to get them completely covered. Let the spam and the glaze cook for a few minutes until the glaze has thickened and is slightly caramelized on the spam. Turn up the heat a little if needed, but not too much, or it will be difficult to clean.
Step 8
Take the frying pan off the heat, set aside to cool.

Musubi Assembly

Step 9
Once all the elements have been prepared, set up your workstation with your rice, nori, spam, furikake, musubi molds (optionally use the spam can), and a small bowl of water.
Step 10
Assemble the Musubi by first placing your musubi mold on top of your prepared nori. Next press 1/3 cup rice into the mold, with a little furikake on top. Remove the mold, place a slice of spam over the rice brick and wrap the nori tightly around the rice and spam, using a tiny bit of water to seal the seaweed wrapping. Continue this process until all of your spam has been used.
Step 11
If you do not have a musubi press, you can utilize a spam can. Simply line the can with plastic wrap, place your rice and furikake inside, and twist the plastic wrap around the rice until a firm brick is formed. Remove the rice, add a slice of spam and wrap it all in a piece of nori, using water to help make a tight seal.
Step 12
