Step 1
In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously to create a roux. Cook the roux for 2-3 minutes until it becomes lightly golden.

Gradually add your broth of choice to the roux, whisking constantly to avoid lumps. Continue whisking until the mixture is smooth.

Stir in your dry seasonings (garlic powder, onion powder and white pepper). Stir until smooth.

Turn off the heat and mix in miso paste until completely smooth.

Taste the gravy and adjust the seasoning if necessary. Keep in mind that miso is salty so you might not need to add much additional salt.

If the gravy is too thick, you can add a bit more broth to achieve your desired consistency. If it's too thin, you can let it simmer for a bit longer.
Step 7
Serve the gravy hot over roast meat, roasted vegetables, mashed potatoes, or with my turkey egg rolls.
