Step 1
Heat oil in nonstick skllet. Add sausage and cook, stirring often, until heated through and browned on both sides, about 5 minutes.
Step 2
Prepare cauliflower and asparagus per package directions (about 3 or 4 minutes each in the microwave). Set aside to cool before assembling bowls.
Step 3
Divide pesto among 4 small lidded containers and refrigerate.
Step 4
Divide cauliflower among 4 serving containers. Top each with a quarter of the asparagus and a quarter of the sausage. Refrigerate for up to 4 days. To reheat, vent lid and microwave on High for 2 or 3 minutes. Top with pesto before serving.
