Instructions
Step 1
Preheat the oven to 350 °F (180 °C). Line a muffin tin with muffin paper liners. Slightly oil with oil spray. Set aside.

In a large mixing bowl, whisk yogurt, olive oil, lemon juice, lemon zest, sugar, and vanilla extract if your yogurt is unflavored/unsweetened.
Step 3
Fold in flour and baking powder and use a rubber spatula to incorporate. Stir until the batter is smooth and thick.
Step 4
Divide the batter evenly into the 8 muffin holes and sprinkle with granulated sugar.
Step 5
Bake the muffins at 350 °F (180 °C) for 22-25 minutes or until the top is lightly golden brown and a toothpick inserted in the center of the muffins comes out clean.
Step 6
Let them cool down on a cooling rack at room temperature.
