2 cupsflour

1 Tbspbaking powder

½ tspbaking soda

½ cupbutter
cold

1 ½ cupssharp cheddar
grated

¾ cupbuttermilk
2 Tbsp“Everything Bagel” seasoning
1 Tbsp mixed into dough, 1 Tbsp sprinkled on tops
Instructions
Step 1
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Step 2
2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and Everything seasoning

3. Cut in the butter with a pastry cutter or fingertips until mixture looks like coarse crumbs with some pea-sized butter bits.

4. Stir in grated cheddar.
Step 5
5. Add buttermilk gradually, mixing just until dough comes together (don’t overwork).
Step 6
6. Turn onto a lightly floured surface, pat into a 1-inch thick rectangle, fold it over itself once (for layers), then pat again to ~¾–1 inch thickness.
Step 7
7. Cut with a floured round cutter (2 ½ inches). Place on baking sheet close together for softer sides, or spaced apart for crispier edges.

8. Brush tops with a little buttermilk, add a touch more cheese and spice on top.
Step 9
9. Bake 15–18 minutes until golden brown and puffed.
