Instructions
Cook potatoes
Step 1
Prick potatoes all over them microwave on high until tender
Step 2
Smash between 2 sheets of baking paper using a burger press, spatula or pan
Fry potato
Step 3
Heat a non stick frying pan over a medium high heat
Step 4
Add cheese to the pan, no need for oil, in small rounds roughly the same size as the smashed potato
Step 5
Top with the sweet potato, cook until golden and crispy then flip over until golden and crispy on the other side.
Step 6
Do a few at a time if you have the space
Serve
Step 7
Stack the sweet potatoes, top with an egg, chilli oil, yoghurt or creme fraiche, pickled onions, chilli crisp and chives.
