One Pot Chicken Paella

Instructions

Step 1
Preheat the oven to 200°C/180°C (fan)/gas 6 and let the chicken air.
Step 2
Heat a wide-based, oven-proof casserole dish with olive oil over medium-high heat.
Step 3
Add diced chicken thigh, salt, and pepper, cook for 2-3 min until browned.
Step 4
Boil kettle. Peel and chop onion into wedges. Slice sweet pepper into rings.
Step 5
Once chicken is browning, add onion and pepper, cook for 1-2 min to soften.
Step 6
Add rice, smoked paprika, saffron, half the garlic paste, stir.
Step 7
Add stock mix, tomato paste, and 600ml [780ml] [1.2L] boiled water.
Step 8
Bring to boil, cover, and put in oven for 25-30 min until cooked.
Step 9
Mix remaining garlic paste and mayo with water, salt, pepper for aioli.
Step 10
Serve drizzled with aioli and garnish with chopped parsley.
