Instructions
Heat oil
Step 1

In fryer, add oil to at least 3 inches deep.

Heat oil 150-160°F.

Flour Mixture

In a wide shallow bowl, mix together flour, cornmeal, cornstarch, and cayenne.

In separate bowl, beat egg and buttermilk.
Step 5
Separate onion slices into rings.
Prep Onion Rings

Working in batches, lightly toss the rings in flour mixture, then dip into the buttermilk mixture.

Allow most of the liquid to pour off, then dip in the flour mixture again.
Step 8

Shake off as much flour as possible and place rings into the hot oil.
Frying
Step 9
Fry for 2 to 3 minutes, or until golden brown, moving the rings around a bit to keep them separated.
Step 10
Put the rings on a plate or bowl lined with paper towels and salt.

Step 11

Repeat until all the rings are done.
