Copycat Taco Bell Crunchwrap

Found a copycat recipe, but I tweaked it a lot, so adding it as my own. I also learned you can put almost anything inside, from breakfast items (hash browns instead of corn tortilla) or a Big Mac spinoff (patty instead of taco meat). Go vegan with beans and rice instead of meat, super versatile and fun to eat!

Step 1
Cook ground meat, drain, add in taco seasoning per directions on package.
Step 2
If you only have soft corn tortillas, brush or spritz with oil and either pan-fry or bake at 350 for 10-15 minutes, until crisp. Skip step if you have crunch corn tortillas (flat tortilla chips would probably work as well).
Step 3
To warm tortilla, spread 2 Tablespoons (1/8 cup) nacho cheese sauce in center of tortilla. Add up to 1/4 cup of ground meat (look for a solid but flat layer) over the cheese sauce.
Step 4
Place corn tortilla on top of meat. Place a layer of sour cream, diced tomatoes, lettuce, and then shredded cheese on top.
Step 5
Pre-heat a griddle or large (9 or 10 in) skillet on med-low. Warm each flour tortilla by placing on griddle for 30 seconds each side. Move to prep area.
Step 6

Fold out edges of flour tortilla in center, using an overlapping fold, using a bit of oil or butter to help folds to stick together (see picture). If the folds do not reach the center, use a piece of another tortilla to cover the fillings.
Step 7

Return assembled crunchwrap back to heat, folds downs, for 2-3 minutes until toasted. Flip and cook for another 2 minutes.
Step 8
Repeat for the remaining cruchwraps. You could turn this into a family affair with an assembly line to build these quickly. You can also make more and save them for later reheating.
