Turkey Quinoa Meatloaf

Ingredients

For the Veggies
0.5onion
diced
2cloves garlic
minced
1carrot
medium, quartered
1celery stalk
quartered
1 cupbaby spinach
packed
1 Tbsptomato paste
1 Tbspsoy sauce
For the Meatloaf
Instructions
Step 1
Preheat oven to 425 degrees.
For the Veggies
Step 2
Combine onion and garlic in a food processor and pulse until chopped. Transfer to a large skillet and cook until soft and fragrant.
Step 3
Combine carrot and celery in a food processor and pulse until chopped. Add spinach and pulse a few more times. Add to the onions and garlic and cook until they release their liquid, the liquid evaporates and they brown slightly.
Step 4
Add in the tomato paste and 1 tbsp soy sauce and cook for a few more mins. Then transfer to a bowl to cool slightly.
For the Meatloaf
Step 5
To the same bowl, add the ground turkey, egg, quinoa, 1 tbsp soy sauce, salt and pepper. Mix gently with your hands and then scrap into a loaf pan.
Step 6
Spread the top of the loaf with BBQ sauce or ketchup.
Step 7
Bake until cooked through and browned, about 40 mins. Let cool for 5 mins before slicing.
