Turkey Rancher Pie

Instructions

Step 1
Add baking soda to ground turkey and combine. Set aside in fridge for later use. Set oven to 350
Step 2
Place cauliflower in large microwaveable bowl. Cover bowl with a layer of plastic wrap. Poke several holes in the plastic wrap.

Step 3
Microwave cauliflower for 5 minutes. Carefully remove plastic wrap and season cauliflower with salt and pepper and stir. Recover tightly and microwave for an additional 2 minutes.
Step 4
Keep microwaving cauliflower covered until absolutely fork tender. Mine took 10 minutes all together.
Step 5
Heat milk and butter in small saucepan over medium high heat, until butter is melted and milk steaming.
Step 6
Add milk butter mixture into cauliflower. Use immersion blender to blend mixture until smooth. This can alternatively be done with a standard blender or food processor. Once smooth, add parmesan and incorporate. Check for seasoning and set asside
Step 7
Add oil to pan over medium high heat. Once pan is heated, tip in turkey. Season liberally with salt and pepper. Cooking until meat is just cooked through.
Step 8
Add onion and carrot to crumbled meat, cooking for a couple minutes until mixture is fairly dry. Add tomato place and mix into mixture with oregano and the thyme. . Then cook until paste takes on a slightly dark color and herbs are fragrant.

Meanwhile add beef base to warm water. Add Worcestershire and corn starch to mix and whisk until smooth.
Step 10
Add beef base mixture in meat mixture. Stir until liquids reduce and reach a sauce-like consistently. Stir in mixed veggies. Check for seasoning.

Add meat mixture into 9 by 12 or large casserole pan. Spread evenly. Add cauliflower mixture on top. And spread over evenly. If desired, grated top with additional parmesan. This will encourage slight browning.
Step 12
Cook casserole for 45 minutes uncovered. It can then be cooked under broiler at high for 5 minutes or until desired browness is achieved.
Step 13
For serving, allow to set for 15 minutes, then cut into slices. Serves eight very generous slices.
