Instructions

Step 1
In a bowl, whisk together Dijon mustard, maple syrup, apple cider vinegar, garlic, thyme, salt, and pepper.
Step 2
Place chicken breasts in a shallow dish or zip-top bag. Pour marinade over chicken, coat well, and refrigerate for at least 30 minutes (up to 4 hours).
Step 3
Preheat oven to 400°F (200°C).
Step 4
Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken 2-3 minutes per side until golden brown.
Step 5
Pour remaining marinade over chicken, then transfer skillet to oven. Bake for 15-20 minutes or until chicken reaches 165°F internally.
Step 6
Remove from oven and let rest for 5 minutes before slicing.
Step 7
Garnish with parsley and serve with your favorite sides.
