Instructions
Step 1
In a heatproof bowl over simmering water (double boiler), whisk egg yolks and sugar until thick and pale (about 5 minutes). Remove from heat and let cool slightly.
Step 2
Whisk in the mascarpone until smooth.
Step 3
In another bowl, whip the heavy cream until stiff peaks form. Gently fold into the mascarpone mixture.
Step 4
Mix cooled coffee with liqueur (if using).
Step 5
Quickly dip each ladyfinger into the coffee mixture (don’t soak too long, or they'll fall apart).
Step 6
Arrange a layer of soaked ladyfingers in a dish, spread half the cream mixture over. Repeat with another layer of dipped ladyfingers and finish with the remaining cream.
Step 7
Cover and refrigerate for at least 4-6 hours (overnight is best for flavor).
Step 8
Before serving, dust generously with cocoa powder.
