MOCHA Tiramisu

My version of the classic tiramisu with more chocolate and “halalfied” aka no rum. Layers of lady fingers soaked in chocolate and coffee, and layers of a light and smooth whipped mascarpone cream. One of my favorite classic dishes!

Instructions
Step 1
Whisk your egg yolks and sugar in a bowl over a double boiler until it thickens. Allow to come to room temperature before using.
Step 2
Combine your cold heavy cream and vanilla extract, and using an electric mixer, whip the mixture until stiff peaks form.
Step 3
In a separate bowl, combine your mascarpone cream and the cooled egg yolk mixture. Whisk until smooth. Slowly begin to fold in your whipped cream, be careful to not deflate the mixture.
Step 4
In another separate bowl, melt your chocolate chips in the microwave and then mix in the cold brew. Put the mixture back in oven so that it’s easier to combine the two.
Step 5
Begin to assemble: coat your lady fingers in the chocolate-coffee mixture and place in a 7x11 pan. Once the first layer of lady fingers is done, spread half of the cream mixture over. Continue with another another layer of chocolate-coffee soaked lady fingers, and spread the remaining cream mixture. Top with cocoa powder dusting.
Step 6
Allow the tiramisu to chill in the fridge for at least 4 hours before cutting into it. Enjoy!
