Step 1
Preheat oven to 425 degrees. On a large sheet pan, spread potatoes and Brussels sprouts. Drizzle with 1 tablespoon oil and season with salt and pepper. Roast until tender, 20-25 minutes.
Step 2
In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, garlic, ginger and 1/2 tablespoon oil.
Step 3
In a large skillet over medium-high heat, heat remaining oil. Working in batches as needed, cook steak until browned on all sides, 2-3 minutes. Transfer to a plate.
Step 4
In the same skillet, stir in soy sauce mixture, scraping up any browned bits. Simmer until slightly thickened, 1-2 minutes. Return steak to skillet and toss to coat. Serve with potatoes and Brussels sprouts, drizzled with remaining sauce.
