Instructions
Step 1
Mix sugar, cinnamon, nutmeg and 8 cups water in large pan and mix well. Cook on low.
Step 2
Mix 2 cups water, lemon juice and cornstarch in bowl, set aside.
Step 3
Peel, core and slice apples.
Step 4
Pack the apples somewhat tight in jars, leaving 1.5" headspace. (Do NOT overfill, apples expand)
Step 5
Bring sugar mix almost to a boil, then whisk in cornstarch mix.
Step 6
Using a ladle, fill jars with hot syrup mix, removing air bubbles.
Step 7
Wipe rim, put on hot lids, screw on ring and water bath for 25 min.
